There’s not much to say about this bowl. It’s good, and I eat it a lot.
Me, trying to figure out what quote to put here
A daily staple
We’ll keep this quick. I work from home, which affords me the great benefit of being able to cook for myself everyday. However, I sometimes am constrained to weird time frames because of meetings. Grr.
The solution? This thing. I’ll be totally up front; I’ve never made this for anyone else. You might hate it. You might love it? It’s up to you if you want to take the risk. Nonetheless, here’s how to make the meal I eat three or four times a week.
What you’ll need
- 1 sausage link (go for nitrate-free stuff! You’ll get fewer headaches)
- 1/2 an onion, diced
- 1/2 cup of rice (I make my Chipotle White Rice!)
- 1 tablespoon of olive oil
- 1 tablespoon of chives
- 1/2 teaspoon of salt
Optional additions
- 2 eggs
- A piece of fresh homemade bread
How to assemble
- Make your rice. You should know how to do this by now. Use a rice cooker. Laugh. Pray. Cry, if you must.
- Place a medium to small sized pan on the burner on medium heat. Oil the pan.
- Toss in your diced onion. Stir to prevent the onions from sticking to the pan. Salt to taste.
- Once the onions are starting to darken, toss in your sausage. I like to cut my sausages into discs, but you can do what you want.
- While the sausage and onions are cooking, put your rice into a bowl.
- When the sausage and onions are done cooking (the onions should be caramelized a bit), put them on top of the rice. Stir everything in.
- Top with chives to taste
If you want to take it further…
- Crack your eggs directly into the hot pan.
- Fry them on medium heat until the edges are nice and crispy. Flip the eggs.
- Place your crispy fried eggs on top of your rice.
- Stuff a piece of bread into the edge. It’s good. Bread is good.
It’s hot, and it’s ready!
There you have it! It’s not the most elegant meal of all time, but it’s pretty tasty and easy to make. You can start your rice before a meeting and then finish the meal afterwards. It’s flexible, tasty, quick, and pretty cheap too! Also, adding eggs and bread really increase the amount of nutrition you’re consuming, so it can be adjusted based on how hungry you are.
